Raspberry and Chocolate Brownies


Today is new years eve. Time to remember (or in many cases forget) 2011 and look forward to the new year and all the possibilities it brings.
2011 was a big mixed bag for me. It had it's highs, like the creation of this blog, finding a new friend for life and finally shifting some kilos but you can't have highs without lows. 2011 had many low points for me but all of them made me a better person in the end.

Coconut Snowballs

Ricotta, ham and tomato lasagne


The boys in my household love lasagne. Whenever there is a request for dinner it is always always always lasagne. You know how they say that lasagne is even better the next day? Well I wouldn't know because it never lasts that long at my house. Once I made a beautiful char grilled vegetable lasagne and the boys were not impressed so when I decided to try this version I was preparing for a battle.

Lemon Jelly Cakes


There really is no story behind these little lamington like cakes. Except that I was having dinner at my girlfriends house on Thursday night and we were discussing what we would do for our weekly girls lunch the next day. While flipping through recipes plus there were these little dainty looking cakes and my lovely girlfriend told me I had to make them. So of course I did.

Basic Pizza Dough

Making your own pizza dough is strangely satisfying. It taste so much better then the stodgy thick bases you can buy pre made. The only thing that may even come close to a home made pizza base is my other favourite type of base, pita bread.

It takes a little time but once made you can wrap it in glad wrap and put it in the freezer. It will keep for 3 months. Get the kids to help out, they will love the gooey floury mess!

Makes 2 30cm bases
Ingredients:
7g sachet of yeast
1 tsp caster sugar
1/2 tsp salt
2 cups of plain flour - plus extra for dusting
2 tbl spoons olive oil

Method:
1. Mix 3/4 cup warm water, yeast, sugar and salt in a small bowl. Cover with a tea towel and set aside for 5 minutes or until the mixture is foamy.
2. Sift flour, add the yeast mixture and oil in a large bowl. Mix into a dough consistency. If the dough seems too sticky, add more flour. Turn the dough out onto a lightly floured surface and knead for 10 minutes. Cover and rest in a warm place for 25-30 minutes or until double in size.
3. Punch dough down and knead for a further 2 minutes. If freezing your dough, at this point wrap the dough in cling film and put in the freezer. Cut dough in half. Roll out each half to form a 30 cm base. Alternatively you can make this into 4 small pizzas or 4 calzone.
4. Add your fav toppings and cook in 180 degree oven for 20-30 minutes.

Goats Cheese Tortellini with Capsicum Puree



I know what most of your are thinking 'Eeeww goats cheese' and I used to be in that boat too.
Until one day I went to a funky little tapas bar in Yarraville called Dig a Pony. They serve these little balls of goats cheese with honey and caramelised onion. I swear they are one of the nicest things I have ever eaten, I still dream about them and am always hanging for my next visit to Yarraville so I can gorge myself.

Toddler Friendly Pasta

This dish is a great way to get some veggies into fussy little toddlers. Its even suitable for smaller babies, from about 9 months. If you are feeding a baby you can use a stick mix to blend up the sauce so its smoother.
