This was a favourite with me and my sister when we were growing up. And its a meal that I've continued to make for my friends. In fact its become some what of an inside joke amongst us all.
Most who try it think it is delicious and I have had many requests for the recipe. My sister and I always laugh because its something we have both learnt from our mum and its become a "family recipe" so often when giving out the recipe we may leave out an ingredient.
But here it is, in its full form for you all to enjoy. I promise you and your family will love it and may enjoy it even more on sandwiches the next day (If there is any left!)
This recipe makes a meatloaf big enough for 4. If your feeding more than that you just need to double the ingredients, making sure you always have equal quantities of mince and sausage mince.
I always add peas and corn but as a friend of mine pointed out last night when I made it for her family, you could add grated carrot and other veggies.
500gms beef mince
500gms sausage mince
3/4-1 cup breadcrumbs
1/2 tomato sauce
2 tsp curry powder
1 onion finely diced
1 cup frozen peas and corn
1/2 cup water
1/2 cup tomato sauce
1/4 cup brown sugar
1 tsp curry powder
1. For the glaze place the water, sauce, sugar and curry powder into a saucepan and stir until mixed. Cook over a medium heat until boiling, reduce to low and continue to cook until the sauce has thickened slightly
2. Pre-heat oven to 200 degrees. In a large bowl mix the beef mince and sausage mince together until well combined. Add the egg, breadcrumbs, sauce and curry powder. Using your hands mix it all together then add in the onion, peas and corn.
3.Place the meat mixture into a large baking tray and shape into a loaf. Making sure to smooth out the large cracks. Place in the oven for 1 hour, basting with the bbq glaze every 15 mins.
5. Slice into thick slices and serve with mash potato and steamed veggies.
