Thai Chicken Bags

Well as most of you know I am currently trying to shift a few kilos. This means that our diet at home has changed slightly.


And as per request from a few of you there will be some nice fresh healthy meals. Hopefully I can make them super tasty without feeling like your starving yourself (or me!).

For those of you who still love all the sweet treats and comfort meals. Never fear. I will still be cooking them, I just wont be eating them :( But I have a very excited partner who is looking forward to not having to share.

This recipe uses some very familiar ingredients to me in a method that I have seen plenty of times but have never actually tried.
My partner LOVED it and suggested it would be a great summer evening meal. Judged on that alone I rate this dish as a massive success. I usually get a shrug of the shoulder and a "It was alright".

Ingredients:
4 Chicken breast fillets - skin off.
1/2 cup coriander leaves - chopped
1 tbl spoon brown sugar
1 tsp ginger paste
1 tsp fish sauce
1/4 cup lime juice
2 tbl spoons sweet chilli sauce

To serve:
Additional coriander leaves
Steamed rice
Steamed (or stir fry) Asian veggies

Method:

How your parcel should be folded.

1. Preheat oven to 200°C. In a small bowl combine the coriander, brown sugar, ginger, fish sauce, lime juice and sweet chilli sauce.
2. Score a few lines in the thickest part of the chicken breasts. Place each chicken breast on a 30cm piece of foil. Fold over the foil so its in half and then seal the sides by folding over the edges 2-3 times. Leave the top open.
3. Pour a little of the mixture into each bag so it coats the chicken. Seal the top the same way as the edges.
4. Place each parcel on a baking tray and place in the oven for 20 minutes or until chicken is cooked through,
5. Serve with steamed rice and veggies. Top with fresh coriander.
