Toddler Friendly Pasta

This dish is a great way to get some veggies into fussy little toddlers. Its even suitable for smaller babies, from about 9 months. If you are feeding a baby you can use a stick mix to blend up the sauce so its smoother.

The sauce is versatile and can be served with pasta, rice or even couscous. I have used tuna today but BBQ chicken works really well too. As this is for babies/toddlers I have made it very basic but you can add and change things to suit your child's taste. I sometimes add a tiny amount of herbs like basil or parsley. And as most of you know, my son loves parmesan cheese so I grate a small amount over the top.

I recommend freezing the sauce as it makes a lot in terms of baby portions. Sauce is best frozen before you add the pasta. Once sauce is cooled, spoon into freezer safe containers.

Ingredients:
3 mushrooms - diced finely
2 small stalks celery - diced finely
3-4 florets of broccoli -diced finely
1 carrot - washed, grated with skin on
1/4 of a capsicum - diced finely
1 tble spoon tomato paste
575gm jar of pasta sauce
Pasta of your choosing.

Method:
1. Heat a tiny amount of oil in a saucepan over a medium low heat. Add the vegetables and cook until they start to soften. Stir in the tomato paste and cook for a few minutes. Add the pasta sauce, stir. Reduce heat to low and simmer covered for 15-20 minutes. Add the tuna and stir with a fork to make sure its broken up.
2. Meanwhile bring a saucepan of cold water to the boil. Once at a rapid boil, add your chosen pasta and cook according to the packet. In this case I used shells and they cook for approx 13 minutes.
3. Drain and add into the sauce stirring to make sure its all coated.
4. Spoon pasta into a bowl and grate over some cheese.
