Weight Watchers Walnut Brownies

Well you guys asked for here it is.
Something not only low in fat but also very yummy. These beautifully moist brownies come straight from the Weight Watchers everyday cookbook. They are 2 points each for any of you following at home.

Some of the ingredients listed are the weight watchers brand but you can easily substitute low fat varieties that you can get from any supermarket ie: Low fat drinking chocolate and salt reduced margarine.

This recipe also works really well when made into muffins. They are incredibly easy, you wont even need to get your electric mixer out! And the more you get used to making them the easier it is to add in some of your other favourite ingredients, such as frozen berries.

1 1/4 cups self raising flour - sifted
2 tbls weight watchers drinking chocolate
1/4 cup firmly packed brown sugar
100g weight watchers canola spread - melted
1 tbs white vinegar
1 tsp vanilla essence
1/2 cup walnuts - coarsely chopped
1 cup of water

1. Pre heat oven to 180 degrees. Line the base and sides of a 20cm slab cake pan with baking paper.
2. Place the flour, drinking chocolate and sugar in a large bowl. Stir to combine. Add the spread, vinegar, vanilla and walnuts. Stir until well combined. Add the water a little at a time, mixing in between.
3. Pour the mixture into the prepared pan and smooth the surface. Bake for 20-25 minutes or until a skewer inserted in the centre comes out almost clean.
4. Remove from the oven and set aside in the pan for 30 minutes to cool. Cut into 16 squares and dust with additional drinking chocolate. Serve.
