Homemade LCM's

I wasn't quiet sure what to call these. In America they are 'Rice Krispie Treats/Squares', sometimes you know them as 'Marshmallow squares', 'Rice Bubble bars' and who knows whats else.

This post is especially for my brother who commented last weekend that he reads my blog but hasn't made anything from it because "there are too many sweet things and I'm not a sweets person".

Basic Pizza Dough

Making your own pizza dough is strangely satisfying. It taste so much better then the stodgy thick bases you can buy pre made. The only thing that may even come close to a home made pizza base is my other favourite type of base, pita bread.

It takes a little time but once made you can wrap it in glad wrap and put it in the freezer. It will keep for 3 months. Get the kids to help out, they will love the gooey floury mess!

Makes 2 30cm bases
7g sachet of yeast
1 tsp caster sugar
1/2 tsp salt
2 cups of plain flour - plus extra for dusting
2 tbl spoons olive oil

1. Mix 3/4 cup warm water, yeast, sugar and salt in a small bowl. Cover with a tea towel and set aside for 5 minutes or until the mixture is foamy.
2. Sift flour, add the yeast mixture and oil in a large bowl. Mix into a dough consistency. If the dough seems too sticky, add more flour. Turn the dough out onto a lightly floured surface and knead for 10 minutes. Cover and rest in a warm place for 25-30 minutes or until double in size.
3. Punch dough down and knead for a further 2 minutes. If freezing your dough, at this point wrap the dough in cling film and put in the freezer. Cut dough in half. Roll out each half to form a 30 cm base. Alternatively you can make this into 4 small pizzas or 4 calzone.
4. Add your fav toppings and cook in 180 degree oven for 20-30 minutes.

Enjoy :)

Cookies and Cream Cheesecake

My nephews 13th birthday was coming up and he requested that I make a baked cheesecake. I have only ever made 2 other cheesecakes but both were a great success, and judging by how fast this cheesecake got eaten I would say it was too.

Low-fat Penne Boscaiola

I know many of you out there love creamy pasta but probably hate that its full of cream and not very kind to your waistline. Surely there has to be a way to still enjoy that creamy goodness without sacrificing all those calories.

Chocolate Orange Cupcakes

*Groan* Another cupcake!

Damn right its another cupcake. If you haven't noticed it is my current obsession. How could you not love something that is so versatile. Cupcakes really allow you to be creative in the way you make, bake and decorate. Not to mention they are often super yummy!

Reeses Cookies

No they don't belong to Reese nor did he create this recipe. He does however have some pieces of his peanut buttery goodness inside. I am of course referring to Reeses Pieces.

Mars Bar Crackles

The last in a week of party food. And what a long, exhausting but exciting week it has been. My baby boy is now two years old and becoming more independent everyday.
This post was meant to go up yesterday but obviously I had a million other things on my mind, the first being ensuring that my baby had a fun day.

Healthy Chicken Nuggets

Every kid I know loves chicken nuggets. And as I recently found out many of them on the market hardly contain any actual chicken breast, which really should come as no surprise.

Chocolate Peanut Butter Cups

Another quick and easy bite size treat. If you haven't realised by now, I am a huge advocate of 'quick and easy' or 'one pot cooking'. So it no surprise that these little beauties came from SFI's One pot cooking

Sandwich Sushi

Lets face there is only one reason kids love parties (aside from the presents). It's because they know they will get to gorge themselves on lollies, cake, fairy, bread and all the food that they don't usually get to eat.

Frankies in Blankies

Another kids party favourite. Cocktail frankfurts. When they hit the table you better get in quick or miss out.
In recent times my mum had been buying "puff dogs" which are essentially a frankfurt in pastry or a"pig in a blanket".

Sausage Rolls

Sausage rolls. The first in a week of party food leading up to my beautiful sons second birthday.
