Healthy Chicken Nuggets

Every kid I know loves chicken nuggets. And as I recently found out many of them on the market hardly contain any actual chicken breast, which really should come as no surprise.


But never fear Mums of the world. Its easy to make your own at home and if done the right way they can be healthy. Baking them in the oven means you don't have to use any oil and the natural yoghurt locks in some moisture so they don't become dry and chewy. They dont look as pretty as your traditional nugget but trust me they are ten times yummier.

As a side note, you don't have to use the ritz biscuits for crumbs. You can use cornflakes, weetbix, savoys or good ol' fashioned bread crumbs.

Ingredients:
500gm chicken breast
1/2 to 3/4 cup natural yoghurt
1 packet of ritz biscuits

Method:
1. Pre heat your oven to 180°C. Cut each chicken breast up into bite size pieces (nugget size). Place them in a bowl and add the natural yoghurt. Mix well and let it marinate in the fridge for 30 mins.
2. Put the ritz biscuits into a freezer bag and crush them well until they look like fine crumbs (leave some larger pieces for some crunch). Pour them into a shallow dish. Remove the chicken from the fridge, taking a few pieces at a time remove some of the excess yoghurt and cover them in the ritz crumbs. Place on a wire rack above a baking tray.
3. Cook in the oven for approx 20-30 or until chicken is cooked and the outside is nice and brown.
4. Serve with your favourite sauce.
