Homemade LCM's

I wasn't quiet sure what to call these. In America they are 'Rice Krispie Treats/Squares', sometimes you know them as 'Marshmallow squares', 'Rice Bubble bars' and who knows whats else.

I'm sticking with LCM bars. Down under that is what most people would know them as. A quick and simple treat for lunch boxes or parties. And I'm going to go out on a limb here and say you could probably make these for less then what it costs to buy the real thing.
I used to make these with my nephews when they were little. It requires minimal effort from them and you can get the bars made before their attention span runs out.

200gm marshmallows
80gm butter
4 cups rice bubbles

1. Line a small tray (approx 26x17cm base) with baking paper. In a large microwave safe bowl, place the marshmallows and the butter. Cook in the microwave for approx 2 mins (depending on your microwave), until smooth. Don't worry if the butter seems to separate from the marshmallow mixture.
2. Meanwhile in a separate large bowl, add the rice bubbles. Once the marshmallows and butter are melted, add to the rice bubbles and mix well until combined.
3. Tip the rice bubble mixture into the prepared pan. Spread out evenly using the back of a spoon. Right now is a good time to add anything on the top, like m&m's, choc chips, sprinkles etc. I used the remainder of my Reeses pieces. Refrigerate for 1 hour or until set.
4. Tip out onto a board and cut into desired size. With this size pan you should get about 16 bars.
