Sandwich Sushi

Lets face there is only one reason kids love parties (aside from the presents). It's because they know they will get to gorge themselves on lollies, cake, fairy, bread and all the food that they don't usually get to eat.

But if your a mum looking for a healthier alternative to sausage rolls and party pies then give this sandwich sushi as go. They are easy and surprisingly kids will love them.

Again this is one that you can fill with whatever you want. I used tuna, avocado and grated carrot but you could throw in some grated cheese, cucumber, shaved ham or if your catering for adults then some smoked salmon with some rocket or chicken, feta and sun dried tomato would be delicious.

I'm using a whole loaf of bread because I am catering for lots of people, however this makes a great lunch for toddlers and kids.

1 loaf of wholemeal bread (or white/multi grain) - sliced
3-4 tbl spoons cream cheese
425g tin of tuna
1 carrot - grated
1 avocado - halved and thinly sliced

1. Cut the crusts of each slice of bread and using a rolling pin, flatten. Spread each slice with a small amount of cream cheese.
2. On the longer side of the bread, lay across some tuna in a line, followed by some grated carrot and a slice of avocado. Roll the bread up, tucking the filling in as you go. Cut each roll into 3 pieces.
3. Serve on a platter with some grated carrot and avocado as a garnish.
