Coconut Snowballs

Another yummy Christmas treat from my mum, Wendy. Although I do think it's slightly amusing that my mum, the woman who hates anything that is snow related when it comes to Christmas ("Because it's the middle of summer"), has made a recipe called "snowballs".

250gm marie biscuits
1/2 cup desiccated coconut
50gm glace` cherries
1 tsp vanilla extract
395gm condensed milk
1 and a 1/2 375gm packets of nestle white chocolate melts
1/2 cups desiccated coconut - extra

1. In your food processor, blend the biscuits until they resemble bread crumbs. Pour into a large bowl. Add the coconut, cherries, vanilla and condensed milk. With damp hands, roll tablespoons of the mixture into balls. Place in the freezer to chill for approx an hour.

2. Place the white chocolate melts into a microwave safe bowl. Cook on medium for 1-2 minutes, stirring every 30 seconds until the chocolate is smooth and completely melted. Remove the snowballs from the freezer and dip them, one at a time, into the melted chocolate. Shake off the excess and place the snowballs onto a baking tray lined with baking paper.

3. Before the chocolate sets, sprinkle balls with the extra desiccated coconut. Once the chocolate has set, place the snowballs into an air tight container and keep in the fridge.
Take them out of the fridge approx 15-30 minutes prior to serving to allow them to soften slightly.
