Raspberry and Chocolate Brownies


Today is new years eve. Time to remember (or in many cases forget) 2011 and look forward to the new year and all the possibilities it brings.
2011 was a big mixed bag for me. It had it's highs, like the creation of this blog, finding a new friend for life and finally shifting some kilos but you can't have highs without lows. 2011 had many low points for me but all of them made me a better person in the end.



I have a few resolutions for the new year, and while I am aware that many resolutions don't even see the end of January, I definitely want to get back into my cooking and baking. 2012 is a fresh start for me and I hope that the rest of you are looking forward to it with as much excitement.

To celebrate tonight I have made these delicious Raspberry and Chocolate brownies.

Ingredients:
150gm butter - chopped
200gm dark chocolate - chopped
1 cup caster sugar
2 tsp vanilla extract
3 eggs - lightly beaten
1/2 cup plain flour
1/2 cup self raising flour
100gm white chocolate - chopped
1/2 can of raspberries in syrup

Method:
1. Pre heat oven to 180°C. Grease and line a slice pan. Melt the butter and dark chocolate in a medium heat proof bowl over a saucepan of simmering water. Making sure the simmering water doesn't touch the bottom of the bowl. Once smooth remove the bowl from the saucepan.
2. Stir in the sugar and vanilla. Add the eggs and flour. Stir until well combined. Add the white chocolate and raspberries. Mix well.
3. Pour mixture into prepared pan. Bake in the oven for 30-35 minutes or until crumbs cling to a skewer when inserted. Cool in the pan.
4. Turn out onto a board and cut into small squares.
