This Spinach dip is so quick, easy and inexpensive. With essentially only two step it makes the perfect dish to take to parties or along to a bbq.
I have made this for a bunch of parties and more often then not its the first thing to be finished. People love it, whether its because its the novelty of the fact you eat the "bowl" or because it simply taste delicious.
This particular recipe was given to me by a girlfriend years ago when she used to make it for our girls nights.
1 250g block frozen spinach - thawed
1 cup whole egg mayonnaise
1/2 cup sour cream
1 30g packet spring vegetable soup mix
1 cob loaf
1/2 baguette (for extra dipping)
1. Squeeze all the excess liquid out of the thawed spinach. Place into a bowl. Add the mayonnaise, sour cream and soup mix. Stir until well combined.
2. Slice the top off the cob loaf and scoop out all the bread from the middle to form a bowl. Spoon the dip into the bread bowl. Cut the baguette into bit size dipping pieces.
3. Place the bread bowl onto a serving platter and arrange the extra pieces of bread around the outside.
