Lemon Cheesecake Slice
I have had the ingredients for this cheesecake slice sitting in my cupboard for weeks now.
I have been putting it off mainly because once there is cheesecake in my fridge I am likely to eat it!
So I have been waiting until I have some company to share it with.
Luckily for me, my good friend Scott comes over every Tuesday night and we have dinner together. Seemed like a perfect opportunity to finally whip this delicious slice up.
Its texture is firmer then a normal cheesecake and the lemon flavour seems subtle at first until you get a mouthful of lemon curd.
A delicious afternoon treat to share with people you care about.
1 x 200gm packet Arnotts lattice biscuits
500gm cream cheese - softened
395gm can condensed milk
1 lemon - rind finely grated and juiced
3 tsp gelatine
2 tbs boiling water
1 cup lemon curd
1. Line the base and two long sides of a slice tin with baking paper. Line the base with the lattice biscuits, cutting them to fit if necessary.
2. Using electric beaters, beat the cream cheese in a large bowl until light and creamy. Add the condensed milk and lemon rind and juice, beating until just combined.
In a small bowl add the gelatine and cover with the boiling water. Stir until dissolved.
Add to the cream cheese mixture and beat until combined.
3. Pour half the cream cheese mixture over the biscuit base. Dot teaspoons of half the lemon curd over the cream cheese. Use a skewer to swirl around, making a marble pattern.
Pour over the remaining cream cheese mixture and repeat with the remaining lemon curd.
Place in the fridge for 3-4 hours to set.
Cut into slices and serve!
