Rice pudding seems to be one of those dishes that you either love or hate.
I am in the former. I love rice pudding. Although this was the first time I have cooked it.
Considering my inability to cook rice the conventional way, I think it turned out pretty well.
60gm butter - chopped
5 cups milk
2/3 cups arborio rice
2 tsp orange zest - finely grated
2/3 cups caster sugar
2 tsp vanilla essence
100gm dark eating chocolate
50gm dark eating chocolate - grated
1. Place butter, milk, rice and a pinch of salt in a large heavy based saucepan over moderate heat. Bring to a gentle simmer.
2. Reduce heat to low. Cook, covered, stirring occasionally to prevent mixture from sticking to bottom of the pan, for 45 minutes or until nearly all the milk has been absorbed.
3. Add the zest, sugar and essence. Cook, covered, for 15 minutes or until rice is soft and milk has been absorbed.
4. Place chocolate in a medium heat proof bowl. Cook in the microwave for 30 seconds, stir, cook for a further 30 seconds. Stir until melted and smooth. Spoon rice into serving bowls, drizzle over the chocolate sauce and sprinkle with grated chocolate.
