Reese's Pieces Cupcakes with PB and Cream Cheese Frosting

I don't know if I've mentioned it before but when I was pregnant peanut butter was one of my major food cravings.

There were seriously not enough peanut butter flavoured snacks in the world at the time. And that was before stuffing peanut butter into any kind of sugary food was 'trending' so trying to find a bag of peanut butter m&m's or an 1kg bag of Reese's pieces were I live was almost impossible.
FYI I really do have an 1kg bag of Reese's pieces in my cupboard....well it used to be 1kg hehe

I used to just resign myself to eating peanut butter out of the jar with a spoon. Don't judge me! I'm sure we've all done it.
If not with peanut butter than at least Nutella.
Side note: How anyone resists the urge to not consume the whole jar of Nutella straight home from shopping is beyond me! Hence why I don't buy it ;-)

The urge to find a way to put peanut butter into my all of my food was as bad as my food cravings got. No ice cream and tomato sauce here (has any pregnant woman ever actually craved that...sounds so cliche)

Although my baby is growing up fast I am still guilty of occasionally sneaking to the cupboard for a spoon full of salty sweet goodness.

Consume at your own risk. I did manage to display enough will power to save some for the cupcakes. 

These are cheats cupcakes. A whipped up batch for my brothers housewarming present (fellow PB lover). But it goes to show that you can still create delicious mouth watering cupcakes with half the effort.
Ignore my terrible piping. I'm a little out of practice.

Reese's Pieces Cupcakes:
1 box Coles plain vanilla cake mix
2 eggs
1/2 cup milk
60 grams butter, melted.
2 heaped tablespoons peanut butter
1-1/2 cups Reese's pieces

PB & Cream Cheese Frosting:
250gm cream cheese - softened
2-4 heaped tablespoons peanut butter
2 cups icing sugar

1. Pre heat oven to 180. Line a cupcake tray with cases. Place the butter into a microwave safe bowl and microwave for 20 seconds. Remove and stir until completely melted.
Add the peanut butter to the melted butter. Stir until melted and combined. 
Zap again in the microwave for a few seconds if peanut butter isn't melting completely.
Set aside.

2. Empty the cake mix into a large bowl. Add the egg, half the milk and the peanut butter mix into the cake mix. Fold until combined.
Add remaining milk and gently mix until smooth. Try not to overmix or you will get chewy cupcakes.
Fold through the Reese's pieces.
Spoon cake batter into cupcake cases. Place in the oven and bake for 20-25 mins or until a skewer inserted into the centre comes out clean. 

3. Meanwhile, place the cream cheese and peanut butter into the bowl of a mixer. Mix until light and creamy.
Add the icing sugar, a little at a time.
If the frosting mixture seems a bit dry add a little milk.

4. Remove the cupcakes from the oven and set aside for 5 minutes then transfer to a wire rack to cool completely.
Once cool, pipe the peanut butter and cream cheese frosting onto your cupcakes.
Decorate with extra Reese's pieces.
